What is a canelé?
A small pastry from Bordeaux, flavoured with rum and vanilla, with a soft custardy centre and a crisp caramelised shell.

Should I grease the moulds?
Yes – a light coating of butter (traditionally with beeswax) gives the best crust and release.

Any tips for success?
Rest the batter in the fridge overnight and bake hot – it makes a big difference to the crust.
